Brinjal Dip
• 3 to 4 Brinjals (cut up)
• 2 Tomatoes (chopped)
• 1 Onion (chopped)
• A few cloves of Garlic (chopped)
• A few Coriander leaves
• Salt to taste
• 2 to 3 tsp Olive oil
• 2 tsp Extra Virgin olive oil
• ½ Lemon
• 2 Green chilies (cut up)
TOTAL TIME:40 minutes
• PREPARATION TIME: 30 minutes
1. Take about 2-3 tsp olive oil to sauté the vegetables: garlic, onions, green chillies, brinjal, tomatoes; keep stirring until the vegetables are well cooked.
2. Turn off the stove and add some extra virgin olive oil, mix it and add some coriander leaves.
3. Cool the vegetables and grind it.
4. Squeeze ½ lemon.
Spicy and tangy Brinjal Dip is ready to serve.
