Brinjal Pakoda Curry
(Vankaya Pakodi Koora)

Brinjal – 200 gms
Oil – 2 Tbsp
Onion – 1 no. chopped
Green chili – 1 no.
Ginger garlic paste – 1/2 Tsp
Tomato – 2 nos chopped
Turmeric powder – 1/4 Tsp
Chili powder – 1 Tsp
Coriander powder – 1 Tsp
Curry leaves
Coriander leaves
Water – 2 Tbsp

For Pakoda
Besan/Gram flour – 1 cup
Rice flour – 2 Tsp
Turmeric powder – 1/4 Tsp
Chili powder – 1 Tsp
Ginger garlic paste – 1/4 Tsp
Green chili – 1 no.
Onion – 1 no. chopped
Curry leaves
Coriander leaves
Oil for frying

1. Making Pakoda: In a wide bowl add besan/gram flour, rice flour, salt, turmeric powder, chili powder, ginger garlic paste, green chili, onion, curry leaves, coriander leaves and mix well.
2. Gradually add water and mix to a batter consistency.
3. Heat oil for deep frying.
4. Gently drop pakoda mixture in a hot oil and fry till it turns golden brown in color. Keep the poakoda aside let it cools down.
5. Next cut brinjals into thin slices and put in salt water.
6. To make curry, heat oil in a wide saucepan. Add onion, green chili and saute till onion turns transparent.
7. Then add ginger garlic paste and saute 2 minutes.
8. Add the tomatoes, turmeric powder, chili powder, salt, coriander powder and saute till tomatoes become mushy.
9. Now add brinjal, curry leaves and mix well.
10. Reduce the flame to medium close and cook for 8 minutes, till the brinjal is tendered.
11. Cut the pakoda into small pieces.
12. Once the brinjals are cooked add the chopped pakoda, coriander leaves, water and mix well.
13. Close and cook for another 5 minutes.
14. Brinjal Pakoda Curry (Vankaya Pakodi Koora) is ready and serve hot with rice.
