Chettinad Prawn curry – Recipe
Ingredients: For Masala powder
Coriander seeds – 1 Tbsp
Cardamom pods – 4 nos
Cinnamon – few pieces
Cloves – 4 nos
Pepper corns – 6 to 7 nos
Red chili – 3 nos
Piece of Mace/Javitri
Fennel seeds – 1/2 tsp
Cumin seeds – 1 tsp
Poppy seeds – 1 tsp

Marinating Prawn
Prawns (deveined) – 1/2 Kg
Turmeric powder – 1/2 tsp
Chili powder – 2 tsp
Salt

Oil – 1 Tbsp
Mustard seeds – 1 tsp
Shallots – 25 nos chopped
Green chilis – 2 nos slit
Few Curry leaves
Ginger garlic paste – 1 tsp
Tomatoes – 2 nos chopped
Turmeric powder – a pinch
Chili powder – 2 tsp
Coriander powder – 1 tsp
Ground masala powder – 1 1/2 tsp
Tamarind pulp – 1 Tbsp
Water
Garnish with curry leaves

Method:
1. First dry roast Coriander seeds, Cardamom pods, Cinnamon, Cloves, Pepper corns, Red chili, Mace/Javitri, Fennel seeds, Cumin seeds & Poppy seeds
2. Let them cool and grind to powder
3. To the prawns, add turmeric powder, chili powder & salt. Mix and let it sit
4. Heat oil in a wide pan. Saute Mustard seeds, Shallots, Green chilis, Curry leaves. Saute till brown
5. Now add Ginger garlic paste, Tomatoes, Turmeric powder, Chili powder, Coriander powder, Ground masala powder. Mix
6. Check for salt / seasoning and cook till the tomatoes become mushy
7. Add thick Tamarind pulp, some water. Close & Cook till oil separates.
8. Add the marinated prawns and mix. close and cook for 5 minutes
9. Finally, garnish with curry leaves and then turn off. Done!
