Ingredients for marination:
6 Chicken Drum Sticks
1 cup – Yogurt
1 tbsp – Red Chili Powder
1/2 tsp – Mace powder
1/2 tsp – Pepper powder
7-8 strands – Soaked saffron
1 tbsp – Ginger paste
1 tbsp – Garlic paste
1 cup – poppy seeds paste (poppy seeds soaked in warm water for 30 minutes, then ground it to a paste)
Salt to taste
1/2 lemon – juice
Ingredients for frying:
1/2 cup – Mustard oil
Method of preparation:
Marinate the chicken with yogurt, red chili powder, mace powder, Pepper powder, Soaked saffron, ginger paste, garlic paste, poppy seeds paste and salt. Mix them well and marinate for 4-5 hours.
Before Frying the marinated chicken add lemon juice and mix it well.
On a hot pan add mustard oil, let it smoke.
Then switch off the light, cool it down, and then re-heat it.
Once the oil is hot, add the marinated chicken and fry it till it’s done.
Reduce the flame to medium and cover it and cook it.
Stir the chicken occasionally and cook it till it’s done.
Our Kolkata Style Chicken Chaap is ready to be served.
