Hotel Style Sambar

Ingredients

For Masala
Gram Dal – 1 tsp
Urad Dal – 1 tsp
Coriander Seeds – 2 tsp
Fenugreek seeds – 1/4 tsp
Cumin Seeds – 1 tsp
Red Chili – 5 nos
Shallots – 4 nos
Asafoetida Powder – 1/2 tsp
Grated Coconut – 3 tbsp
Powdered Jaggery – 1 tbsp
Soaked Tamarind – 1 tbsp
Ghee

For Cooking Dal
Toor Dal – 1/2 cup
Moong Dal – 1/4 cup
Tomato – 2 nos(chopped)
Green Chili – 2 nos
Turmeric Powder – 1/4 tsp
Red Chili Powder – 1 tsp
Water

For Cooking Sambar
Shallots – 1 cup
Drum Sticks – 1 no(pieces)
Water
Salt
Ghee

For Tempering
Mustard Seeds – 1/2 tsp
Urad Dal – 1/2 tsp
Cumin Seeds – 1/2 tsp
Red Chili – 2 nos
Asafoetida Powder – 1/4 tsp
Curry Leaves
Ghee

Prep time: 30 minutes
Cook time: 60 minutes

Method

1. Roast all the masala ingredients in some ghee
2. Cool down the mixture and add jaggery, salt, and tamarind puree
3. Grind it to a fine paste
4. Pressure cook the dal, tomatoes, green chilies, turmeric powder and chili powder for about 4-5 whistles
5. In a saucepan, add ghee and saute shallots and drumstick
6. Add water and cook the shallots and drumstick for about 10 minutes
7. Add the masala paste and let it boil
8. After it boils, add the cooked dal and some water
9. Add salt according to your taste
10. Heat some ghee and add the tempering ingredients
11. Pour the tempered ingredients onto the sambar.
12. Hotel-Style Sambar is ready to be served now
