Jackfruit Paniyaram Recipe

Ingredients:

Jackfruit – 10 pieces
Jaggery – 100 gms
Water – 1/2 cup
Grated Coconut – 1/2 cup
Ghee
Cardamom powder – 1/2 tsp
Rice flour – 2 tbsp
Wheat flour – 2 tbsp
Sooji/Semolina – 2 tbsp

Method:
step 1: Making jaggery syrup
1. Heat 1/2 cup water in a pan
2. Add the jaggery and melt it completely

step 2: Cooking the jackfruit
3. In a deep pan add the ghee and fresh grated coconut and roast for a minute
4. Reduce the flame and add the chopped jackfruit
5. Strain and add the jaggery syrup
6. Cook in low flame for 2 to 3 minutes. Put the flame off and let it cool down

step 3: Making batter
7. To the cooled syrup, add cardamom powder, Rice flour, wheat flour and semolina / rava and mix well
note: Add more rice flour to get the right consistency

step 4: Making the paniyaram
8. Warm the paniyaram pan in low flame
9. Add few drops of ghee in the capsules and fill in the batter
10. cook on both sides 7 to 8 minutes
11. When it turns brown, take out and serve!

Aloo Paratha Recipe
Ingredients: Boiled Potatoes – 3 nos
Chilli powder – 1/2 tsp
A pinch of Turmeric powder
Cumin powder – 1/2 tsp
Amchur powder – 1/2 tsp
Salt to taste
A few chopped Coriander leaves
Chapati Dough
Ghee/Butter

Method:
1. First of all, cut in to half & Boil the potatoes with skin
2. Once boiled, remove the skin & mash the potato
3. Add 1/2 tsp of Chilli powder, a pinch of Turmeric powder, 1/2 tsp of Cumin powder, 1/2 tsp of Amchur powder, Salt, a few chopped Coriander leaves & mix well.
4. Take a ball of dough & flat it thick
5. Now keep some Aloo filling & fold the dough from all the sides to seal it
6. Press down & gently roll it
7. Cook both sides with some ghee or butter.
8. Your Aloo Paratha is ready you can have it with Pickle or Curd.
