Kaju Katli Recipe / Kaju barfi / Kaju Katli / How to Make Kaju Katli at home :

This is an amazing sweet which we think as a difficult recipe to make but it is actually quite simple and easy to make at home . It only requires few ingredients and once you start doing this at home ,you never buy at shops.

Direction :
To make cashew nut powder:In a mixie / Blender ,add the cashews and Grind them to a coarse powder. Don’t grind it for a long time because if you grind for a long time ,the cashews will ooze out their fat.
To Prepare Sugar syrup:In a pan, add water and sugar .Stir it until it dissolves completely.Boil it until you reach a string consistency.
To make Kaju katli :Reduce the heat to low ,add the cashew powder and cardamom powder and mix well and keep stirring until it thickened up.It should leave the sides of the pan and the mixture should come together as a whole.Make sure you do it in low heat.Allow the mixture to become warm.
To shape Kaju katli :While it is warm,Knead the mixture to a smooth dough.Place the dough in between the parchment paper and roll them to a thin layer.
Cut them diagonally using knife or pizza cutter.If you want you can Coat them with Edible silver leaves .
