Low Carb Tortillas – 2 Ingredients

1 head cauliflower
2.5 – 3 cups shredded mild cheddar cheese
1 egg white
Process cauliflower in food processor to the texture of rice or grits.
Microwave cauliflower for 10 minutes, covered, stirring half way through.
Squeeze out cauliflower in cheesecloth until liquid is removed.
Add cheese, stir and microwave 1-2 minutes or until cheese is melted.
Stir in beaten egg white.
Spread on parchment in thin rounds about 8” in diameter.
Bake at 400 degrees for 12-15 minutes.
Transfer to a spoon handle or rolling pin to and allow to cool in the shape of a taco shell.
Makes 8 servings.
