Mango Cheese Cake also can be called a Pudding is eggless and not baked is one of the simplest of the desserts to make for the summer parties. This cheesecake is rich, creamy and full of flavours from the fresh fruit of the mango. It is eggless and there is no use of flours or even thickeners. I found this recipe in one of from my moms recipe files, it was torn and almost in the verge of losing its print. The only difference from that recipe and this is, that the recipe in the file used hung curd, but I have used Mascarpone cheese. The crust used digestive biscuits and I used the same, except that in very little quantity to give that crunch to the pudding.
