Ingredients:-

2 steaks boneless fish
Salt and pepper as required
1 tsp oil
Fresh thyme
6-7 shallots
6-7 whole garlic cloves
6-7 cherry tomatoes

Sauce
1/4 cup butter & oil
1 whole lemon, juiced
1/4 cup fresh cream
1 tsp fresh thyme
Salt and pepper
2 tbsp parsley

Veggies
Handul blanched french beans ,carrots & spinach!

Method:-

Blanch the carrots, beans and spinach leaves.

The Marination:-
Add salt, black pepper and oil to both the sides of the fish.

The Frying:-
Heat butter and oil in a pan and place the fish in it skin-side down. While the fish is cooking add the thyme leaves. Flip the fish after cooking for a minute and add more butter. Throw in fresh garlic, shallots and cherry tomatoes. Baste the fish while frying and take it out on a plate.

The Lemon Butter Sauce:-
In a pan add in a dollop of butter, fresh cream, thyme and cook it for 30-45 seconds on low flame. Turn the flame off and add fresh lemon juice and mix well. Add black pepper.
TIP:- In case you feel the sauce is split just add in a touch of corn flour.

The Sauted Vegetables:-
Heat a pan and add a dollop of butter and add carrots, beans and spinach leaves to it. Add some salt to taste followed by black pepper and fresh parsley.
