Pudina Rice

Ghee – 1 tbsp
Urad dal – 1/2 tsp
Chana dal – 1/2 tsp
Mustard seeds – 1/2 tsp
Cumin seeds – 1/2 tsp
Red chili – 1 no
Onion – 1 chopped
Curry leaves
roasted peanuts – 1 tbsp
Tomato – 1 chopped

For Puthina Paste:
Oil – 3 tsp
Urad dal – 1 tsp
Chana dal – 1 tsp
Cumin seeds – 1/2 tsp
Red chili – 3 no
Green chili – 2 no
Garlic – 3 chopped
Ginger – 1 chopped
Mint leaves – 1 bunch
Coriander leaves – 1/2 bunch
Grated coconut
Tamarind – 1 no (soaked in water)
Salt – 1 1/2 tsp

1.For puthina paste. Take a wide saucepan. Heat oil and add 1 tsp of urad dal, 1 tsp of chana dal, 1/2 tsp of cumin seeds, 3 red chili, 2 green chili, 3 chopped garlic, 1 chopped ginger, 1 bunch of mint leaves and 1/2 bunch of coriander leaves, grated coconut, 1 soaked tamarind pieces, 1 1/2 tsp of salt and saute it all together.
2.Let it cool and grind to paste with adding little water.
3.Now, take a wide saucepan. Add 1 tbsp of ghee, 1/2 tsp of urad dal, 1/2 tsp of chana dal, 1/2 tsp of cumin seeds, 1 red chili, 1 chopped onion, curry leaves, roasted peanuts, 1 chopped tomato and saute it all together with grounded puthina paste.
4.Now, add leftover or cooked rice with the masala mixture and mix it all together.
Pudhina rice is ready to serve with an appalam.
