Ragi Mudde | Ragi Kali | Ragi Sankati : These are super healthy dish that taste amazingly delicious when served with with any spicy curries or dal or even with nonveg curries. I always serve it with spicy mutton curry. Traditionally it is made with only ragi flour but I love adding some rice which gives extra taste and texture to the ragi balls. Definetely give It a try and am sure you will love it.

In a heavy bottomed pan ,Add 2 ½ Cups of water and allow it to boil.
Add a spoon of ragi flour (from the 1 cup ) , some ghee and a pinch salt (just add very little). Salt is actually optional. Its a personal preference.The salt in the curry that we serve with ragi ball is good enough to eat ragi balls.
Keep stirring and allow it to boil.
Now add the cooked rice and the ragi flour into the water. Do not mix. Let the mixture cook for 5 to 6 minutes on medium flame.
After 5 mins ,Keep mixing for a couple of minutes using the back side of the spoon .The mixture will start leaving the sides of the pan and it comes together.
Switch off the heat and cover it with the lid and set aside for 5 to 8 mins.
To check if it is cooked well, dip your hands with water and touch the ragi mixture.If it is not sticking in your hands ,it means its done.
To Make Balls : Grease a bowl with some ghee.
Take some ragi mixture and add into the greased bowl.
Wet your hands with water and roll it into a nice round ball.Whenever you feel hot / warm, dip your hands with water and continue.
You have to make balls when it is warm itself.
Delicious Ragi Mudde is ready .Serve it with some hot curry of your choice

Mutton Gravy Recipe / Mutton curry / Mutton Kulambu / Simple Lamb curry (without Coconut):This curry is absolutely delicious in taste and it is made with simple Onion tomato gravy without coconut. I made this spicy mutton curry for Ragi Mudde. This curry is bit spicy, so you can reduce as per your spice level.Try this tasty mutton gravy in your home and share your feedback

To Pressure cook Mutton : In a Pressure cooker, add the cleaned mutton pieces, ginger garlic paste , Turmeric powder, Green chillies and required salt. Add enough water and mix well.
Pressure cook for 4 to 5 whistles on a medium heat or until done.
To prepare gravy : In a pan, heat some Oil and temper it with cinnamon stick, cloves, star anise, cardamom and fennel seeds.
Add finely chopped Onions and saute till it become soft and slightly brown.
To that, add ginger garlic paste and fry it till raw smell goes.
To that, add turmeric powder, Kashmiri chilly powder(gives color), Coriandewr powder and garam masala powder.Saute for 2 mins.
Add Tomatoes and saute till mushy.
To that, Add the cooked mutton and required salt(check and add if needed )and mix well.
Close the lid and allow it to simmer for about 15 to 20 mins until everything combined together.
Add pepper powder, fennel powder, Coriander leaves and boil for 5 minutes.
Tasty Mutton gravy is ready.Serve it with rice or Ragi mudde.
