Soya Chunks Biryani
Ingredients:

Basmati Rice – 200 ml (soaked 30 mins)
Soya Chunks – 30 nos (soak in warm water 15 to 20 minutes)
Ghee – 2 Tbsp
Whole Spices
(Cinnamon, Clove, Bay Leaf & Cardamom Pods)
Onions – 2 nos. (finely chopped)
Tomatoes – 2 nos chopped
Green Chilis – 3 nos
Turmeric Powder – 1/2 tsp
Salt
Water – 250 ml

For the masala:
Garlic – 1-1/2 tsp chopped
Ginger – 1-1/2 tsp chopped
Red Chilis – 3 nos
Grated Coconut – 1/4 cup
Shallots – 2 nos
Coriander Powder – 1 tsp
Few Coriander Leaves
Few Mint Leaves

Method:
1. Soak the basmati rice in water for 30 minutes
2. Soak the soya chunks in warm water for 15 to 20 minutes
3. Squeeze water from the chunks and keep aside

Masala for the biryani
4. Grind garlic, ginger, red chilis, grated coconut, shallots, coriander powder, mint & coriander leaves in to coarse paste.
5. In a pressure cooker, add ghee, whole spices, finely chopped onions and saute
6. Add the masala paste, tomatoes, green chilis, turmerice powder and salt and mix well
7. Now add the soya chunks, coriander leaves and mint leaves
8. Add basmati rice and water and mix.
9. Pressure cook till done!

Soya Masala Dry
Ingredients

Soya chunks – 1 cup
Cumin powder – 1 tsp
Cumin seeds – 1/2 tsp
Ginger & garlic paste – 1 tsp
A few Curry leaves
Onion – 1 finely chopped
Tomato – 1 chopped
Red Chilli powder – 1 1/2 tsp
Garam masala powder – 1 tsp
Salt to taste
Water
Oil – 2 tbsp

To Grind
Grated Coconut – 1 1/2 tbsp
Green chilli – 1
Pepper – 1/2 tsp
Fennel seeds – 1/2 tsp
A few cloves of Garlic

Method:
1. Soak soya chunks in hot water for 30 minutes. Squeeze out the excess water and keep it aside.
2. In a wide pan, add oil, cumin powder, cumin seeds, ginger – garlic paste, curry leaves, onion and sauté it for a few minutes.
3. Once the onions turn golden brown add tomato, red chilli powder, garam masala powder, salt and sauté it for a few minutes.
4. Once tomato turns mushy, add soya chunks and mix it well.
5. Grind the grated coconut, garlic, pepper, fennel seeds and green chilli into a coarse mixture.
6. Add the ground mixture to the soya masala and keep stirring till all the excess moisture has been absorbed.
7. Add very little water, cook for 2-3 minutes and blend the masala well.
8. Soya Masala Dry is ready.

Soya Chunks Curry – Recipe
Ingredients: Soya chunks – 30 nos.
(Soak in warm water for 15 to 20 minutes)

For Masala paste:
Coriander seeds – 2 tbsp
Piece of Cinnamon
Few Cloves
Cumin seeds – 2 tsp
Peppercorns – 4 nos
Fennel seeds – 1 tsp
Dry Red Chili – 6 nos
Coconut – 1/2 cup

For cooking:
Oil – 2 tbsp
Cumin seeds – 1/4 tsp
Onions – 2 nos chopped
Tomatoes – 2 nos chopped
Ginger garlic paste – 1 tsp
Chili powder – 1 tsp
Turmeric powder – 1/4 tsp
Salt to taste
Water – 1 cup
Few Coriander leaves

Method:
1. Soak some 30 soya chunks in warm water for 15 to 20 minutes
2. Squeeze out excess water and keep aside
3. Dry roast coriander seeds, cinnamon, cloves, cumin seeds, pepper corns, fennel seeds, red chilis, grated coconut.
4. Let it cool and grind to fine paste
5. Heat oil in a pan. Saute cumin seeds & onions till brown
6. Add tomatoes, ginger garlic paste, chili powder, turmeric powder & salt. Mix well
7. Add soaked soya chunks and mix.
8. Now add the ground masala paste & water. Mix well. Close and cook for 10 minutes
9. Garnish with coriander leaves. Done!
