Baingan Ka Bharta is a delicious village style recipe, where eggplant or brinjal is roasted on fire and then fried with oil and spices. Try this delicious Baingan Ka Bharta at your home and share your experience with us.

Ingredients

4 large green brinjals
12 green chillies
12 garlic cloves
2 large onions
2 tomatoes
Salt as required
1 tbsp turmeric powder
1 tbsp mustard seeds
1/2 tbsp cumin seeds
1/8 tsp asafoetida powder
3 tbsp mustard oil
3 tbsp vegetable oil
Handful chopped coriander

Method
Make few cuts on the brinjal and stud them with garlic and green chillies alternately.

Roast the brinjals till the skin is completely scotched.

Keep the roasted brinjals in cold water for 3-4 mins.

Remove the brinjals from water and peel of the skin.

Cut the crown of the brinjal and also remove the studded garlic and chillies.

Chop the brinjals into chunky pieces.

In a vessel add 3 tbsp mustard oil, 3 tbsp vegetable oil, 1 tbsp mustard seeds, 1/2 tbsp cumin seeds, 2 chopped onions, 2 chopped tomatoes, mix it well and allow it cook for 2 mins.

Add crushed garlic and chillies, 1/8 tsp asafoetida powder, 1 tbsp turmeric powder and mix it nicely.

Add the chopped brinjals and salt as required.

Add chopped coriander leaves.

Spicy and tasty Baingan Ka Bharta is ready to be served with some bhakri.
