Mutton Sukka
Ingredients
Boneless Mutton – 1kg
Juice of 1/2 lemon
Onion – 5 to 6 thinly sliced
Tomato – 4 chopped
Green chilli – 2
Ginger & garlic paste – 2 tsp
A few Curry leaves
A few Coriander leaves
Salt to taste
Oil – 1 tbsp
For Masala powder
Red chilli – 5
Peppercorns – 1 1/2 tsp
Fennel seeds – 1 tsp
A few Cardamom pods
Cinnamon
Cloves
Cumin seeds – 1 tsp
Coriander seeds – 2 tsp
Method:
1. marinate the mutton pieces with turmeric powder, chili powder, salt & lemon juice for atleast 30 minutes
2. Add the meat & 250 ml water. Pressure cook for 6 to 7 whistles
3. Dry roast red chilis, pepper corns, fennel seeds, cinnamon pods, cloves, cumin seeds & coriander seeds.
4. let the mixture cool. Grind to fine powder
5. In a kadai, heat oil. Add onions and green chilis. Saute till transparent.
6. Add ginger garlic paste and curry leaves and half of the ground masala powder, tomatoes and salt. Mix well.
7. Gently add the mutton pieces and half of the stalk water. Cook for 10 minutes
8. Now add the remaining masala powder & mix. Check for seasoning. Add chopped coriander leaves & mix
9. Garnish with curry leaves
