sabudana vada are fried patties made from tapioca pearls, potatoes and crushed peanuts. sabudana vada is usually made during fasting days and festivals like ekadashi, navratri, chaturthi and mahashivratri. though they can also be made on regular days as an evening snack.

sabudana vada is also a popular street food in the state of maharashtra.

ideally sabudana vada should have a crisp exterior and a soft texture from inside. one important tip to get this texture in sabudana vadas is that they should be fried in medium hot oil. if the oil is at a low temperature, the vadas can burst or break in oil and even become soggy by absorbing too much oil. also too much browning can make the sabudana vadas too crisp and hard from the center.

soaking time can vary depending on the quality of sabudana pearls. so take an average of 2 hours to 4 hours. if the pearls are too hard, then you can soak even overnight. the sabudana pearls should be soaked well and on pressing a few pearls, they should get mashed easily.

you can serve sabudana vada with green chutney, curd or sweet tamarind chutney.
