It’s known for its tangy flavour and is part of a meal in South Indian cuisine. Coconut milk rasam is a variation of the traditional rasam that has coconut milk for a creamy texture and a slightly sweet flavour.

For tempering:

  • 2 teaspoons of coconut oil or cooking oil
  • ¼ teaspoon of fenugreek seeds
  • 1 dried red chilli
  • ½ teaspoon of mustard seeds
  • ½ teaspoon of urad dal
  • 5-7 curry leaves
  • A pinch of asafoetida

Other ingredients:

  • 2 teaspoons of crushed cumin seeds
  • 3 cloves of garlic, crushed
  • 2 green chillies, slit lengthwise
  • ½ tomato, finely chopped
  • ¼ cup of tamarind extract
  • ¼ teaspoon of turmeric powder
  • Salt to taste
  • 2 cups of water (adjust for consistency)
  • 1 teaspoon of crushed black pepper
  • 1 cup of coconut milk
  • A few finely chopped coriander leaves

Instructions:

Prepare a delightful coconut milk rasam by heating coconut or your preferred oil in a large kadai. Once the oil is heated, add little mustard seeds, urad dal, curry leaves, hing and dry red chillies to the kadai. Fry the spices until the mustard seeds start to crackle, which gives the rasam a tantalizing aroma and flavour. Next, add crushed cumin seeds, garlic cloves, and green chilli. Sauté until the garlic turns golden brown. Then, add chopped tomatoes, tamarind extract, turmeric powder, and salt to taste. Boil for 15 minutes and add 2 cups of water. Add crushed black pepper and a cup of coconut milk, stirring well. Simmer for 2 minutes, being careful not to boil too much as the coconut milk may curdle. Finish by sprinkling freshly chopped coriander and serve with steamed rice.
