Probably a very non-authentic burrito made by yours truly. I wish I had some guacamole to go with it! I love the fact that simple ingredients like rice, beans and vegetables can make SO many different types of dishes with just a bit of tweaking and a few changes made. I love eating this way and I hope you guys try this! Sorry to any Mexicans that might be offended by how non-authentic this might be LOL.
