fried rice is a popular indian chinese fusion dish. the veg version contains veggies which are stir fried on high heat and then mixed with steamed rice, soy sauce, black pepper and vinegar.
in veg fried rice, the veggies that are usually added are cabbage, carrots, spring onions, french beans and capsicum. you can also add veggies like zucchini, baby corn, steamed sweet corn kernels, boiled green peas and snow peas. some sprouts and tofu can also be added.
the entire veg fried rice recipe is easy to prepare as its done in one pan or one wok except for the chopping part. to make things easier in chopping, you can use a grater or a food processor or food chopper. do use a heavy pan or wok, so that the veggies do not get burnt while stir frying.
veg fried rice can be served plain or with any gravy/sauce based dish like veg manchurian, gobi (cauliflower) manchurian, veg balls in hot garlic sauce, veg schezwan or paneer chilly or paneer manchurian.
