Have you heard of Korean soft tofu stew also known as sundubu jjigae? Did you know that it’s actually super easy to make and also VERY delicious? This is definitely a huge comfort food of mine and I love eating it with a bowl of rice. You’ll find that you won’t be able to stop eating it… 🙂
VEGAN SOFT TOFU STEW RECIPE
Ingredients (for around 3-4 servings) –
6-10 pieces of dried kelp (or you can use kelp powder, see below)
around 2 cups of water (or veggie broth if you’re not using kelp)
1/2 onion
1/2 zucchini
1 king oyster mushroom (or whatever mushroom(s)….)
1/2 jalapeno pepper
1-2 garlic cloves minced
1-2 tbsp sesame oil
1-2 tbsp GOCHUGARU aka Korean Red Chili Pepper Flakes(see below for more info)
2 packages of extra soft tofu (soon tofu) or soft tofu
Salt to taste
1-2 green onions for garnish
