Here it is, guys! Super easy and quick vegan creamy carbonara recipe! It’s so incredible, you could definitely fool some non-vegans with this one. I think it’s perfect for a comforting meal especially if you miss that creamy flavour that normally comes from dairy products. It’s all the goodness and creamy amazingness from dairy, without the unhealthiness and abusiveness of it! How awesome is that??

Ingredients and amounts that we used (approximate measurements – no need to be super precise!):

For the sauce –
1 cup of cashews (boiled because we didn’t soak them overnight)
1 vegetable bouillon cube
1/2 cup of non-dairy creamer – I used Oatly Creamy Oat (you can use regular oat milk or any other non-dairy milk – add more if necessary)
1 tablespoon of Nutritional Yeast (more if you want!)
Salt and pepper to taste

Veggies used –
Onions, mushrooms, zucchini/courgettes
