Drumstick leaves are known as Moringa all over the world which can be abundantly seen in Kerala. Most of the people in Kerala is used to planting moringa tree in their backyard. Including leafy vegetables in your diet is very healthy and nutritious. Our dear chef, Ryhantath, is showing how to prepare drumstick leaves curry or മുരിങ്ങയില കറി with minimal ingredients.

Remove the leaves from the stem and wash them thoroughly under water. Soak the dal in water for some time and strain it. Pressure cook or cook in a vessel – the leaves, dal, turmeric powder, chili powder, and some water. You have to make a fine paste of coconut, onions, and cumin powder. Once the drumstick leaves and the dal is cooked, you can add the coconut paste and stir it continuously. You don’t have to cook more after adding coconut paste. When it starts to boil, you can switch off the flame. The final step is tempering the curry. Pour some coconut oil into a wok and heat it. Add mustard seeds and let them splutter. Add dry red chilies and curry leaves. Finally, pour it on the drumstick curry. You can have it with any kind of rice, preferably parboiled rice or with rotis.
