Ingredients for making Kalmas Snack recipe

Onion – 3

Ginger, garlic, green chili (paste) – 2 +1/4 tsp

Chicken masala – 3/4 tsp

Garam masala – 1/2 tsp

Turmeric powder – 1/4 tsp

Rice powder – 2 cups

Coconut – 1 cup

Fennel seed – 1+1/4 tsp

Cumin seed – 1/4 tsp

Shallots – 8-9

Chicken

Coriander leaves

Curry leaves

Salt

Heat oil in a pan and sauté chopped big onions until it turns soft and golden brown. Then add crushed ginger and garlic, green chilies, and curry leaves. The masala powders can be added once they are well cooked. Saute the mix till the raw smell of the masala disappears. Add the chicken pieces. Mix well and turn off the flame.

For the dough, grind grated coconut, fennel seed, and shallots to a coarse paste. Then in a bowl, add rice flour and ground coconut mixture and mix well. Now add the required amount of boiling water and mix well. When the dough is still warm, knead it well to a soft and smooth dough. Take a small portion from it and flat it in your palms, add the filling, then fold it like unnakkaaya, and steam it well. Our tasty Kannur special kalmas snack is ready to serve.
