The primary thing in preparing mutton biriyani is to use proper cookware. The vessel we use for preparing the dish should be a heavy-bottomed vessel and a proper lid. We have to seal the vessel properly to block the steam carrying the rich aroma of mutton and spices inside the vessel itself. It is advisable to use plain dough to seal the lid with the vessel. Biriyani is cooked mainly in two stages. The first stage is cooking the rice and preparing the mutton gravy loaded with spices separately. Then the rice and the gravy are layered in the vessel one after the other. A generous amount of ghee is poured on each layer. Rice and mutton are half-cooked in the first stage. The rest cooking is in the second stage. Both flavors of spices and mutton get infused into the rice with the richness of ghee in the second stage which makes the dish very delectable and tempting.
