The main highlight of harissa is the smell of rich flavors of ghee and spices and that will make everyone mouthwatering. You can prepare harissa with mutton, beef, or chicken. The mutton, beef, or chicken with all the spices are cooked in a pressure cooker. The other main ingredient of the harissa is wheat. Wheat should be cooked separately in a pressure cooker.

There is a separate variety of wheat, especially for harissa available in Kerala. A little bit different from the usual wheat. Typically harees are prepared during weddings or parties in Kerala mostly in the Malabar areas. As such it is considered a rich and luxurious food. Harissa had a rich creamy texture. Harissa is served with a generous amount of ghee or oil poured on top of it and is garnished with cashews or raisins.

One can eat harees plain without adding any additives. There is no extra spiciness added to the harissa and hence it can be given to kids without any doubts. But people can have harees by adding sugar or a little doze of paprika.
