Ingredients and instructions for making Caramel Semiya payasam.

  • Full-fat milk – 1 Litre
  • Vermicelli – 1 Cup
  • Sugar – 1 Cup
  • Water – 1 Cup
  • Cardamom Powder – 1 Tsp
  • Ghee
  • Cashew Nuts
  • Raisins
  1. Boil full-fat milk. Keep a little boiled milk aside.
  2. Take sugar in a pan and melt it down completely. Once it starts caramelizing, add the boiled milk slowly and keep mixing it.
  3. Let the milk boil along with the caramel for a minute or so.
  4. Take ghee in a pan and add cashew nuts to it. After a few seconds, add the raisins and roast.
  5. Take ghee and vermicelli. Roast it until it is golden brown.
  6. Add water, mix well and then add the milk that was kept aside.
  7. Boil the milk and add caramel milk.
  8. Mix it all well and add cardamom powder, roasted nuts, and roasted raisins.
  9. Cook the kheer on a medium flame for a minute and then turn off the stove.
  10. Caramel Vermicelli Kheer is ready to be served hot or you can refrigerate it and serve it cold.
