Ingredients: chicken, tomato, onion, quinoa, green capsicum, garlic, dried grapes, orange, pistachio, pomegranate molasses, olive oil, curd, paprika powder, kashmiri chilli, pepper powder, cumin powder, lettuce, and salt.

Method: Take a bowl and marinate the chicken with 2 tablespoons of hung curd. Add 1 1/2 teaspoons of paprika powder or Kashmiri red chili powder, 1/2 teaspoon of Arabic masala, 1 1/2 teaspoons of pepper powder, 3/4 teaspoon of salt, and 2 teaspoons of olive oil. Mix the ingredients well. Add 300 grams of chicken breast pieces and mix again. Crush 6 cloves of garlic and add them to the chicken. Cover the chicken and set it aside for 10 minutes.

Next, make the salad dressing. Crush 2 cloves of garlic and add 2 tablespoons of hung curd. Add 1 tablespoon of extra virgin olive oil, and 1/2 teaspoon of salt, and mix well. Add 1/8 teaspoon of cumin powder and 1/4 teaspoon of chili flakes, and mix again. Set the salad dressing aside.

To grill the chicken, heat a grill pan or plain pan on low flame. Add some olive oil to the pan and grill the marinated chicken until it turns golden brown. Cook the chicken on high flame. Once cooked, cut the chicken into small pieces and set aside.

In another bowl, add the grilled chicken, tomato, onion, quinoa, green capsicum, dried grapes, and pistachios. Add the salad dressing and mix well. Serve the salad in another bowl. Decorate the bowl with some lettuce and add more salad dressing. Serve with pita bread. For a citrusy flavor, add 1 orange and some pomegranate molasses.
