Kerala Style Sambar Recipe | Sadya Sambar | Easy Sambar Recipe | സാമ്പാർ – Kerala Sambar is different from the typical Sambars made in other South Indian states. Kerala Sambar is a delicious variation of sambar prepared with mixed vegetables and spices. You can select your own choice of veggies and also a great way to use up all the leftover veggies sitting in your fridge. You can cook the lentils in either a traditional stovetop pressure cooker or an instant pot. Here our chef Raihanath Shajudheen preparing this Kerala Style Sambar Recipe in a pressure cooker. It is very easy to make and can be prepared in 10-15 minutes. In Kerala, we serve sambar usually with parboiled rice. It also tastes great with breakfast recipes such as idli, dosa, vada, or uttapam. come let’s move on to the recipe 🙂

Ingredients needed for making Kerala-style sambar recipe:-

  • Vegetables (Yam, Carrots, Potato, Beans, Bottle guard, Green pumpkin, Eggplant, etc.)
  • Red Masoor Dal – 50 grams.
  • Tamarind pulp – Around 80 ml
  • Sambar Powder (Eastern sambar powder) – 3 tbsp
  • Salt to taste
  • Water – 2 cups

For seasoning:-

  • Fenugreek seeds – 1/4 tbsp
  • Mustard seeds – 1/4 tbsp
  • Coconut oil – 2-3 tbsp
  • Dried red chilies – 3 numbers
  • Curry leaves – 15-20

Step-by-step instructions:-

  1. Before switching on the flame, add red masoor dal, vegetables, 1 1/2 cups of water, tamarind pulp, salt, and sambar powder into the pressure cooker.
  2. Mix well, then close the pressure cooker with the lid and put the weight.
  3. Allow the vegetables to cook, and let the whistle blow once.
  4. Turn off the flame after one whistle, but DO NOT open it right there. Wait for another 10 minutes.
  5. Add more water or salt if required and boil.
  6. Whilst it’s boiling, let’s make the seasoning!
  7. To a hot wok, pour 2-3 tbsp of coconut oil, and first add fenugreek seeds.
  8. Once the fenugreek seeds have turned brown, add mustard seeds, and let it splutter.
  9. Add dry red chilies.
  10. Add curry leaves, be careful!
  11. Pour seasoning into Sambar!
  12. Enjoy with par-boiled rice, chapatis, or dosas!
